What is white pepper?

White pepper comes from the same plant as black pepper, Piper nigrum. The berries are soaked and the outer skin is removed before drying, which leaves a pale peppercorn with a different aroma. Food makers often choose it when dark specks would show, as in pale sauces and soups.

What to specify when you buy white pepper

With white pepper, appearance counts as much as density. A lot can meet your g/l figure and still disappoint if it's dark, stained, or mixed with black berries. So describe the whole product you want.

Detail What to tell us Why it matters
Bulk density Your minimum, in g/l A common trading measure in listings
Grade or washing FAQ, double washed, or your contract terms Labels vary between sellers
Color Your acceptable range, ideally with a sample Affects how the finished food looks
Moisture Your maximum, in % Affects storage and mold risk in transit
Black and broken berries, foreign matter Your maximum for each, in % Affects appearance and yield
Piperine and volatile oil Your minimum, if you buy on flavor Linked to pungency and aroma
Tests and treatment Salmonella or residue limits, and any treatment you require Requirements differ by market and use
Packing and volume Bag type and size, and total quantity Sets the shipping plan and price

For a sense of the range: Indonesian listings we reviewed in November 2026 quoted densities around 620–640 g/l, and their moisture and foreign matter figures disagreed widely. Those are other sellers' published figures, not Arkana Source's specification.

If you buy to a standard, name the edition. ISO 959-2 was revised in May 2026, and older supplier sheets may still follow the 1998 version.

What about Muntok white pepper?

Muntok white pepper comes from Indonesia's Bangka Belitung province and holds a geographical indication in Indonesia. It's the name many buyers know, so it often appears in listings.

Don't take the name on trust. If your order depends on true Muntok origin, ask how the seller documents it. And if you need Muntok, say so in your first message. We'll tell you plainly whether we can offer it, and we'll only use that name for a lot we can support.

Food safety and testing

White pepper is often added to food with little or no further cooking, so agree on testing early. In the US, the FDA can detain imported spices under its Salmonella import alert. Tell us the limits your market applies, and who will handle any treatment, before you order.

Then ask for test results that apply to the lot you're buying. Our quality page explains how we handle these requests.
